Bo Ssam Kimchi (보쌈 김치)

Bo-ssam Kimchi is different from regular kimchi.  It's usually a little sweeter, and less sour.  It's best eaten in lettuce wraps with Bo-ssam (boiled pork), but you can certainly eat it on its own.

Ingredients: (4 servings)
1/2 Chinese radish (~200g)
150g oysters, shucked
1/4 Asian pear
4 chestnuts
1 big leek
5 spoons crushed chilies
1 spoon each: anchovy sauce (멸치 액젓), minced garlic, salt
1/2 spoon each: shrimp sauce (새우젓), sugar
1 small spoon ginger powder
pinch of sesame seeds

Steps:

  1. Soak oysters in water with a little salt.  Shake to clean, then drain.
  2. Julienne the radish and sprinkle with 1 spoon salt.  Let sit for 20 minutes, then squeeze out excess water.
  3. Julienne pear, chestnuts, leeks.  Mix with radish and the rest of ingredients.  Salt to taste.
Notes:
- I've never actually made this.  Instead, we usually just buy our kimchi from the market.  Let me know how it goes!
- I suppose you could also leave out the oysters if you wanted, though I have a hunch the anchovy/shrimp sauces are important for flavor.
